Healthy Fiesta Chicken and Veggie Soup recipe. This recipe is loaded with protein, and low in fat and calories. Great tasting, and can be eaten as a soup or as a dip with whole grain pita chips. The recipe is two servings (one serving = one average sized bowl full) and each serving contains 270 calories, 3.5g fat, 26g protein.
Ingredients:
- 1/2 c water
- 2 c frozen broccoli
- 1/2 c canned corn
- 1/2 c canned diced tomoatoes (i use the ones with green chiles added)
- 2/3 c canned chicken breast
- 1/2 of a red/orange pepper
- 1/2 c fat free shredded cheddar/mozzarella cheese
- 3 tbsp. taco seasoning
- 8 whole grain pita chips
Directions:
Combine broccoli, corn, tomato, pepper, water, and chicken in saucepan and cook on medium-high heat until brocolli is cooked through (approx. 7 min.) stirring occasionally to blend ingredients.
Add taco seasoning and cheese and heat just long enough to melt cheese, stir to mix ingredients.
Serve over pita chips
