Here is a quick, healthy recipe for a southwest grilled chicken salad that you can make in a pinch. It includes no fancy ingredients and can be prepped in about 10 minutes. I eat this on a regular basis and thought i’d share it with everyone as a quick and healthy lunch that’s easily transported to work or eaten at home.
Ingredients
- 1 Grilled Chicken Breast – seasoned to taste
- 1/2 can corn
- 1/4c black beans
- Lettuce
- 2T of western or french dressing
Mix it all together
