This is a Healthy Eggs Benedict Recipe with Healthy Holliandaise Sauce Recipe. Eggs benedict and holliandaise sauce can be one of the worst foods for you. Normally the holliandaise sauce is made with cream and/or large amounts of butter and egg yolks making it high in fat and calories. The recipe below will use an innovative technique to prepare the sauce to make it low in fat, and big in taste. It also ends up rich, creamy and you’ll feel like you’re eating a cheat meal!
Ingredients:
- 1 egg
- 1/2 whole wheat english muffin
- 1/4c cottage cheese
- 1-2 tbsp milk
- 1/2 heaping tsp dry holliandaise sauce mix (I used the Knorr brand)
- 1tsp vinegar
- 1tsp salt
- 1 slice turkey bacon
- dash of paprika
Directions
- Bring your water to a simmer and add vinegar and salt
- Crack your egg, and put in the water – keep it at just a simmer for 4 inutes
- Push your english muffin down in the toaster
- In a separate pan, start frying your turkey bacon
- In a blender or magic bullet, combine cottage cheese, milk and holliandaise sauce mix and paprika - blend until smooth
- Transfer sauce into microwave safe dish and microwave 3 times for 15 seconds each stirring each time
- Place english muffin on a plate, rip the bacon in half, put on muffin, put poached egg on bacon, pour sauce on top
