This easy recipe for sweet potato pancakes is a great way to incorporate the valuable nutrients of sweet potatoes into your diet. These pancakes work great for breakfast or a healthy snack. Each pancake only contains 165 calories, 1.5g fat, and 22g protein!
- 1 sweet potato
- 1 scoop protein powder
- 4 egg whites
- 1 tsp vanilla
- 2 tsp cinnamon
- 2 tbsp stevia
- Cook sweet potato in microwave on high for 5 minutes. Scoop inner contents of potato into bowl, add egg whites and mix well.
- Add remaining ingredients to the bowl, and mix well with fork, this is your batter.
- Spray fry pan with non-stick cooking spray, and pour half of the batter into the pan.
- Cook pancake on medium heat for approx. 4 minutes, flip pancake over and cook an additional 2 minutes (or until cooked through)
