Bad Ass Blueberry Protein Pancakes Recipe


Try this bad-ass blueberry protein pancakes recipe. We all know by now the importance of consuming protein if you're trying to lean-out and build muscle.  When I have a few extra minutes in the morning, I try mix things up and eat some different foods to keep things interesting.  These Bad Ass Blueberry Protein Pancakes are packed with protein and are a great change of pace for your morning routine.

Ingredients:

  • 1/2 scoop vanilla protein powder
  • ½ cup blueberries
  • ½ cup oatmeal
  • 1/3 cup plain nonfat Greek yogurt
  • 1/2 cup egg whites

Directions:

  1. Mix all ingredients (aside from blueberries) in a blender until smooth.  

  2. Stir in blueberries

  3. Spoon batter onto a greased/sprayed skillet.

  4. These pancakes won't bubble like traditional pancakes.  Peek under them, once they look cooked, done and feel firm, you can flip them.

  5. You can dominate these right off the pan since the blueberries provide some good sweetness.  Or you can top with some pure maple syrup.
