Another recipe in a mug! It doesn't get much better than this. This recipe was pretty dang simple, and of course, all you need is a coffee mug and a microwave to cook it. I thought the taste was pretty good for a "banana bread in a mug" recipe. The recipe does contain a significant amount of sugar, however it is high in protein and low in fat. This recipe can easily be used to a sweet fix, but definitely not something you are going to want to eat for every meal of the day. And at 400 calories, it makes for a nice mid day snack.
Ingredients:
add "wet" ingredients to the mug and mix well. add "dry" ingredients to the mug and mix. cook on high in microwave for 2 1/2- 3 minutes.
Nutrition: 400 calories, 6.5 grams fat, 29 grams sugar (14 from banana), 35 grams of protein.
As I said, the sugar content is a little high. One could easily replace the brown sugar for sugar free maple syrup or some molasses or something along those lines. The 14 grams of sugar from the banana doesn't really bother me.
