Whip-up a batch of these blueberry protein pancakes for your breakfast tomorrow. I'll be the first one to admit that my breakfasts get old fast. I will typically eat the same thing every day. We're talking either a bowl of protein oatmeal or a few eggs and some bacon. It is imperative to keep your meals interesting and these blueberry pancakes will keep your diet in check but will add some variety to your morning routine.

Blueberry Protein Pancakes Recipe Ingredients

  • 1 scoop Vanilla Protein Powder (pick your favorite)
  • ½ cup flour (I prefer whole wheat)
  • 1 egg
  • ¼ cup almond milk
  • ½ tsp. baking powder
  • fresh blueberries (as many as you want - but about 1/4 cup)
  • ½ cup Greek yogurt
  • ¼ tsp. vanilla extract

Directions

  • Combine dry ingredients in a bowl - flour, protein powder and baking powder.
  • In separate bowl, mix wet ingredients - Greek yogurt, egg, almond milk and vanilla extract.
  • Combine wet and dry
  • Add blueberries to batter
  • Spoon batter onto pan to - probably makes about 4 good-sized pancakes
  • Cook until golden brown - around 3-4 minutes
  • Top with low cal syrup & more blueberries.
