Here is a recipe for my go-to pancakes. These are the best tasting, and easiest to make pancakes in my recipe book. They are cottage cheese pancakes. The recipe is pretty simple, and most of the ingredients are pretty common items you probably have lying around the kitchen. All you do is throw them all in the vitamix (or whatever blender you have) and you got your cottage cheese pancake batter! I probably make these for breakfast 3-4 days per week. They taste great by themselves, or sometimes I add some sugar free maple syrup. This recipe will make 2 medium to large sized pancakes. I typically just split it into 2 pancakes. Each pancake will contain approximately 205 calories, 2.5 grams of fat, and 16.5 grams of protein. If you are looking for more protein, you could easily add a scoop of your favorite flavor protein powder and some water to this recipe.
Ingredients:
3/4-1 cup quick oats 1/2 tsp baking powder 2 tbsp stevia (low calorie sweetner) 1/2 cup fat free cottage cheese 3 egg whites (or about 1/3 cup liquid egg whites) 1 tsp vanilla extract
Cooking Directions:
Add ingredients as listed into vitamix (or blender of choice), and mix until smooth. Pour onto preheated, pan or griddle and cook 1-3 minutes per side or until done.
