This is a Healthy Chicken Vegetable Alfredo Recipe. Alfredo pasta can be one of the worst foods for you. Normally the Alfredo sauce is made with cream and/or large amounts of butter and Parmesan cheese making it really high in fat and calories. The recipe below will use an innovative technique to prepare the sauce to make it low in fat, and big in taste and really high in protein. It also ends up rich, creamy and you'll feel like you're eating a cheat meal!

Ingredients:

  • 1 Chicken Breast
  • 1 Serving Whole Wheat Pasta
  • 1/2c Cottage Cheese
  • 4 tbsp Milk
  • Mixed Veggies
  • Heaping 1/2 tsp (more or less to taste) Knorr Alfredo Mix
  • 1 tsp Reduced Fat Parmesan Cheese
  • Pepper To Taste

Directions

  1. Boil noodles according to directions
  2. Salt and Pepper chicken breast, cut into strips and fry in a pan
  3. Add 1/2c cottage cheese, alfredo mix, Parmesan Cheese and milk and mix in the magic bullet until creamy
  4. Heat sauce in microwave for 10 seconds at a time until it's just hot - do not over-microwave it
  5. Rinse and drain noodles and place on a plate
  6. Top with veggies
  7. Top with Chicken
  8. Top with Alfredo Sauce
