So I really loved the MuscleTech Healthy Chili Recipe and have made it over and over since Gabe and I initially recorded it for this blog. I had a small tupperware left in my fridge and some potatoes that were about to go bad and had an idea. CHILI CHEESE FRIES! I took about 1/2c of the muscletech chili, a potato, some fat free cheddar and some greek yogurt and made a meal that felt like a cheat! If you have not tried the MuscleTech chili, it is really good...So make that first. Then the next day use your left-overs and turn in into chili cheese fries.

Healthy Chili Cheese Fries Recipe Ingredients

  • Left Over MuscleTech Chili
  • 1/4c fat free cheddar cheese
  • 1 red potato
  • seasonings ( i used seasoned salt and southwest spices)
  • Greek yogurt or fat free sour cream
  • 1/2 tbsp olive oil

Directions

  1. Peel the potato and slice it into french fry pieces
  2. Put the potatoes in a gallon plastic bag with 1/2 tbsp olive oil and your seasonings - blow in the bag, seal it and shake
  3. Bake fries in the oven @ 400 for about 20 minutes
  4. When fries are about done, put 1/2c left over MuscleTech Chili in a bowl, top with cheese and nuke it in the microwave until hot and melty
  5. Mix southwest seasoning with your greek yogurt (or sour cream) for some extra kick - or just use it plain
  6. Put fries on a plate, top with chili and cheese, and then dollop some greek yogurt on top
  7. Eat
