Low Carb- Bacon Cheeseburger Soup Recipe

This recipe actually turned out really well. I even had my wife taste test, and she approved.

This is a low carb bacon cheeseburger soup recipe. This recipe would be great for those of you following a Keto diet, Anabolic Fasting by Cory Gregory, intermittent fasting, or anyone who just wants a healthier, lower carb option for lunch, dinner, or supper.

Ingredients:

1 1/2 cup -chicken broth

1 cup -      Shredded cheddar cheese

1 bag-      Frozen Cauliflower

1/2 cup-   Heavy cream

4 strips bacon

1/2 lb. lean ground beef

1 tsp parsley

1/2 tsp onion powder

1/2 tsp garlic salt

1/2 tsp pepper

Directions:

combine chicken broth, heavy cream, cheddar cheese, and seasoning into a medium sized pot over medium heat. Continue to heat this mixture until cheese is melted well. 

Follow directions on package to cook cauliflower in microwave. Once cooked, add half the bag to the pot.

take other half of the cauliflower with a couple spoonfuls of the broth mixture and emulsify. Can also use magic bullet, food processor or other mixing appliance. Then add this to the pot.

Cook bacon in the microwave- 4 strips for 4- 4 1/2 minutes- then crumble and add to the pot

add 1/2 lb. lean ground beef that is cooked into the pot. 

Let this simmer for 10 minutes, stirring occasionally. Then DONE!

This recipe, when divided into 4 servings will contain per serving:

335 calories

25 grams of fat

20 grams of protein

4.5 grams of carbs
