This is a recipe for healthy, delicious, low fat breakfast pizza bites. These pizza bites taste like a combination of a bread stick and a breakfast pizza (from the eggs). These would be great for breakfast, or to have on hand for a healthy snack. The recipe fills 8 regular sized muffin tins with each muffin bite containing 33 calories, 0.25g fat, 5.5g protein. So definitely a healthy option for whenever you want to eat them.

  • 2 cups cauliflower
  • 3 egg whites
  • 1/2 cup cottage cheese
  • 1/4 cup Fat Free shredded mozzarella
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1/4 tsp garlic powder
  • 9 turkey pepperoni slices quartered
  1. Preheat oven to 425
  2. Line muffin tin with non-stick liners, or spray with non-stick cooking spray
  3. Break up cauliflower in blender or food processor.
  4. Place cauliflower in a bowl and microwave for 5 minutes
  5. Add the rest of the ingredients to the bowl, mix together, and microwave for an additional 1:30, mix again to blend ingredients thoroughly
  6. Pour dough/batter into muffin tin, (should create about 8 muffins)
  7. Place turkey pepperoni quarters on top/into each muffin (about 4 quarters/muffin)
  8. Bake muffin bites at 425 for 25-30 minutes or until lightly brown on top.
