Low Fat Oyster Stew Recipe

My kids hate them. I love them. So when I make oyster stew I get the whole pot to myself.

Oysters. I love oysters. So when I started thinking about all of the food my parents used to make i remembered my dad creating a batch of oyster stew and I needed to figure out a way to make it healthy. For this recipe we'll use blended cottage cheese, skim milk, a can of oysters and their juice and a few ground up oysters for the base, and halved oysters and potatoes to finish off the stew. Total fat in this recipe is 4g TOTAL - all coming from the oysters which are loaded with healthy omega 3 fatty acids so the fat is healthy! Add in a few saltine crackers (if your nutrition plan allows you) and you have good, hearty, healthy oyster stew!

Ingredients

  • 1/2c cottage cheese (more for a thicker sauce)
  • 1c skim milk
  • 1/2 can oysters in water
  • 1 small potato
  • 3/4c water
  • Salt, pepper and other seasonings

Directions

  • In a sauce pan, bring water, salt, and garlic powder to a boil
  • Add diced potatoes and cook for 4-6 minutes until tender (do not discard the water)
  • Blend cottage cheese, oyster juice and 2 oysters in a blender until smooth
  • Add Milk and stir with a spoon until mixed well
  • Pour sauce and 1/2 can of oysters cut in half into sauce pan (with potatoes and water) and heat to just below boiling
  • Eat
