Ok - you guys are in for a treat today. Gabe recently came up with a pretty awesome No-Bake Chocolate Protein Oatmeal Cookies...The are awesome by themselves, but I had an idea and rolled with it. I was not quite sure how they would turn out, but I recorded it anyways and luckily I did because they were AWESOME. I followed Gabe's recipe from the blog (had never made it before) and adding a little twist, came up with a Protein Ice Cream Sandwich. You will not believe this healthy frozen dessert is good for you and packed with protein. I almost felt guilty eating until I realized It had nearly 20g of protein, only 200 calories and 3g of fat. The main step which I do not show in the video is pressing the cookies really flat between some saran wrap...

Ingredients:

Directions

  1. Mix up a batch of Gabe's No-Bake Chocolate Protein Oatmeal Cookies
  2. Spread out a sheet of saran wrap. Dollop 12 equal sized balls onto the wrap (or do them in batches of 6)
  3. Cover with another sheet of saran wrap and press them down into thin little cookies
  4. Place in freezer for an hour
  5. Put about 3/4c of coolwhip in a bowl and add 1/2 to 1 scoop of vanilla protein powder (I used Protogen)
  6. Mix it like crazy until it appears blended.
  7. Dollop about 2 tbsp (or more) of your cool whip / protein mixture onto 1/2 of the cookies and top with the remaining cookies to form ice cream sandwiches
  8. Put back in freezer for a few hours (or overnight)
  9. Try not to eat them all.
