After trying MTS Nutrition Machine Whey Cookies & Cream, and realizing that it tastes so freaking awesome, I figured that I had to make some sort of recipe with the stuff. What better to make than some Cookies & Cream Cupcakes? These cupcakes were pretty simple. I had the majority of the ingredients on hand, however I did decide to try something new. I went out and bought some coconut flour. I see people using it all the time, but I have never tried it. I put it in this recipe, and I think he turned out well. The cupcakes had good texture, they were pretty moist, and they had good overall flavor. I wasn't able to come up with a good frosting, but after talking to Luke, he gave me a good idea (protein powder and cool whip). I will have to try it next time.

This recipe makes about 10 cupcakes each containing about 80 calories, 2.5 grams fat, 1.5 grams sugar, 6 grams protein.

Preheat oven to 400 degrees F

Ingredients:

  • 1 cup oat flour
  • 4 tbsp coconut flour
  • 1 scoop MTS Machine Whey Cookies & Cream
  • 1 tsp baking powder
  • 1/4 cup stevia
  • 1/2 cup almond milk
  • 1/3 cup cottage cheese
  • 1/4 cup unsweetened applesauce
  • 2 eggs
  • 1 tsp vanilla

Directions:

  • In large mixing bowl, or blender, mix all ingredients. (I like to combine dry ingredients first, then add "wet" ingredients)
  • Spoon mixture/batter into 10 lined cups or sprayed cupcake tin.
  • Bake at 400 for 15-18 minutes
