This is a pizza infused stuffed green pepper recipe. We re-use some common ingredients from other SixPackSmackdown.com recipes to create a great-tasting stuffed green pepper. Bell peppers are a great source of vitamin C. If you thought citrus fruits packed a powerful punch when it comes to being a good source of vitamin C, peppers have them beat. Green peppers have twice the amount of vitamin C by weight than citrus fruits, and this powerful punch of vitamin C is an antioxidant that may be effective in preventing certain cancers.

Ingredients

  1. 1 Bell Pepper
  2. 1/3c Brown Rice
  3. A slice of onion
  4. A few canned mushrooms
  5. 1/3+c pizza sauce
  6. 1/3 c Cooked Ground Chicken
  7. A Few Turkey Pepperonis
  8. Diced Tomatoes (garlic & basil is what I used)

Directions

  • Dice onion and mushrooms and sautee in a pan with non-stick spray
  • Pre-heat oven to 350
  • In a separate dish mix cooked ground chicken, rice, tomatoes, pizza sauce, pepperonis and a pinch of mozzarella cheese
  • Stuff mixture into pepper until it's full to the brim
  • Bake in a covered casserole dish for 30 minutes
