Protein Oat Bran Muffins

Picked up some oat bran at the store the other day. I didn't really plan on using it for anything right away, until I looked at the back of the box. There was a recipe for some oat bran muffins. I modified it slightly, and decided to give it a try. The muffins turned out pretty well. The one thing I will mention is that after about a day or so, they did get a little dry. They tasted very good, and were similar in taste to other oat bran muffins I have had in the past. I maybe could add a little more applesauce next time or something. The recipe makes about 12 muffins. The nutrition facts per muffin are as follows: 110 calories, 1.5 grams fat, 9 grams protein, 1 1/2 grams sugar. Very nice set of facts. Ingredients and directions are listed below.

Ingredients:

  • 2 scoops Vanilla protein (I used Top Secret 100% Whey)
  • 1 1/2 cups oat bran
  • 1 cup whole wheat flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 cup stevia
  • 1/2 tsp salt
  • 4 egg whites
  • 1 cup applesauce
  • 1/8 cup Sugar Free Maple Syrup

Directions:

  1. Preheat oven to 400
  2. Combine egg whites, applesauce, and maple syrup in a bowl.
  3. In separate bowl combine protein powder, oat bran, flour, baking powder, baking soda, salt, stevia and mix well.
  4. Add wet ingredients to the dry ingredients and mix well to create muffin batter.
  5. Fill each lined muffin tin about 2/3 full of batter
  6. Place in oven for approximately 10 minutes or until they pass the toothpick test.
  7. Enjoy.
