I didn't have a whole lot of time to make up some fancy dinner, but I didn't need to be fancy with this turkey roast. This dinner provided ton of protein, with very little fat. All of the ingredients were very simple, and it involved very little preparation time. The hardest part of this meal is peeling and cutting the potatoes, otherwise you just open up a couple packages and dump everything in the roasting pan. I found the turykey breast tenderloins at Wal-Mart. They are nice and big, and very tender after only 60 minutes of cooking. This is just another idea of a quick dinner I find myself making fairly often.
The calories are going to vary slightly depending on the type and fat content of your roast, plus the number of potatoes you desire. The roast I had was pretty lean, and 5 potatoes is all I needed for my family. The nutrition content of the exact recipe I used in the video is: 1850 calories, 24 grams of fat, and 165 grams of protein. Broken down into 5 servings, each serving would contain about:

Ingredients: 1 bag mini carrots 5 medium potatoes 2 large turkey breast tenderloins 2 cups chicken broth Directions:
Pre-heat oven to 325 (or whatever the label on the turkey says)
Peel and cube desired amount of potatoes
Combine turkey breast tenderloins, potatoes, and carrots in roaster pan, and pour in the chicken broth.
Bake for approximately 60 minutes (or until turkey is cooked through)
