2-Ingredient Sweet Potato Protein Pancakes Recipe

Well folks, it doesn't get much easier than this recipe I'm about to share with you.  I mean with two ingredients, any simpler and you'd be eating a raw sweet potato.  To make this simple two ingredient sweet potato protein pancakes recipe, all you need is one roasted, softened sweet potato, two eggs and a few spices (we didn't count the spices in the ingredient list - shame on us).

Two-Ingredient Sweet Potato Protein Pancakes Recipe

  • 1 Sweet Potato - roasted, softened and peeled
  • 2 Eggs
  • Dash of cinnamon (optional)
  • Dash of allspice (optional)

Directions

  1. Mash sweet potato in a bowl
  2. Add the two eggs and mix thoroughly
  3. Add desired spices
  4. Heat skillet to medium heat and coat with cooking spray or organic butter
  5. Spoon batter onto skillet in 1/4c increments
  6. Cook on the first side for 5-7 minutes
  7. Flip and cook for an additional 3-5 minutes
  8. Note:  these pancakes do not bubble so you must rely on the timer or they'll burn
  9. Top with your favorite syrup, greek yogurt or use them as a bun on a breakfast sandwich.
  10. Enjoy

So Where is the protein?

Each egg contains around 6g of protein, so if you eat all of the pancakes, you'll end up downing around 12g of protein - not too bad for a recipe with 2 ingredients and no protein powder.  If you would like to add some more protien to your sweet potato protein pancakes recipe, simply add 1/8c of vanilla or cinnamon swirl protein powder to your batter and enough milk or water to maintain the consistency.
