This is a recipe for healthy corn chowder. I find myself making this quite frequently as a healthy alternative during football season. I will just whip up a pot, and let it simmer all day from noon until the Sunday night game. Assuming you eat big bowls of soup like I do, this would create about 6-8 bowls of soup. each bowl containing about 230 calories, 2g fat, 20g protein.
3 cups skim milk 6 cups corn stalk 6 ears of corn 1/4 cup chopped onion 2 chicken breasts diced 1 lg. potato pepper to taste
boil ears of corn in water for about 20 minutes. DO NOT THROW OUT THE WATER when done. cut off corn from each ear and place in a new pot add diced chicken, onions, potato, milk, and corn stalk (the water you boiled the corn in) to the pot, and cook on low until potatoes are tender
